Pumpkin Seed Pesto

This recipe is from Millenium, the best vegan restaurant in the world. It’s meant for pasta, but it’s great as a pizza sauce or sandwich spread. Works well with roasted pumpkin or squash.

INGREDIENTS

  • 2 poblano chilies
  • 1 1/2 cups pumpkin seeds
  • 2 garlic cloves
  • 1/2 bunch cilantro (leaves and stems)
  • 2 limes, juiced
  • 1 T nutritional yeast (optional)
  • 1/4 c. miso paste (optional)
  • water as needed

DIRECTIONS

1. Roast and peel the peppers, removing the seeds.
2. Toast and chop the pumpkin seeds.
3. Blend everything in a food processor until smooth. Add water until it becomes a smooth paste.
